Overview

Hue royal cuisine (ẩm thực cung đình Huế) is the most refined regional cooking tradition in Vietnam, developed over three centuries to satisfy the demands of the Nguyen emperors. A proper royal meal consists of dozens of small dishes — each one a separate preparation — arranged with obsessive attention to colour, balance, and presentation. Signature dishes include bánh khoái (crispy stuffed pancakes), bún bò Huế (spicy lemongrass beef noodle soup, arguably Vietnam's finest noodle dish), com hen (baby clam rice), and an array of rice cakes unique to the region. The emperors demanded 50 dishes at every meal, prepared by a dedicated royal kitchen corps whose descendants still cook in Hue today.

For an authentic royal banquet experience, book at Tinh Gia Vien or Ong Tao restaurant (both in Hue city centre, 300,000–600,000 VND per person). For street-level Hue food, Dong Ba Market after 15:00 and the streets around Nguyen Dinh Chieu are the best hunting grounds. Do not leave Hue without eating bún bò Huế for breakfast.
